The synthetic indigotine I differs chemically only slightly from the natural indigotine from the different types of indigo. Indigofera species (especially Indigofera tinctura) obtained by extraction.

Indigotine may only be used to colour certain foodstuffs and only up to a maximum amount of between 50 and 500 mg/kg of foodstuff.

Indigotine is used as a food additive, e.g. for desserts, ice cream, liqueurs, bakery products and non-alcoholic beverages.
