Decalactones are lactones, i.e. ring-shaped esters of hydroxydecanoic acid. Hydroxydecanoic acid is derived from decanoic acid (also known as capric acid). The most important decalactones are gamma-decalactone (also called peach lactone) and delta-decalactone. Delta-decalactone is an important flavouring in milk fat (see also butter) and causes the sweet note.
