Soya lecithin (Lecithinum ex soya) is obtained from the seeds of Glycine max, soya. Soy lecithin consists of about 40-50% phosphatidylcholine, about 10% colaminkephalin (phosphatidylethanolamine); further phosphatidylinositol, unsaturated fatty acids and vitamin E.
