Raffinose is a non-reducing trisaccharide which, after sucrose, is the most common free occurring sugar. Raffinose consists of D-galactose, G-glucose and D-fructose.

Yeast enzymes break down raffinose into D-fructose and the disaccharide melobiose, while emulsion breaks it down into sucrose and D-galactose.

Functionally, raffinose is a transport carbohydrate in the plant kingdom, which is partly used instead of sucrose. Of course, raffinose is found in many higher plants, such as sugar beets and in many seeds, e.g. cotton seeds.
