Carthamine is a dark red-greenish shimmering, water-soluble flavone-glycoside which, like neocarthamine, can be released from the petals of the safflower (Saflors = Carthamus tinctoria). The dye is dissolved from the petals by washing with water, dried and obtained as safflower red in alkaline solution. Carthamine is used to colour food and cosmetics.

The substance is not very lightfast. It was formerly used to dye textiles (linen, cotton and silk) red.
