Pektin-Methylesterase

Pflanzliche Polypeptide die enyzmatisch Pektinpolymere spalten. Sie sind von allergologischem Interesse, da verschiedene Markerallergene,  z.B Sal k 5 des Salzkrautes (Salsola kali), Ole e 11 einem Minorallergen der Laminales (z.B der Olive) oder Bet v 6 einem Minorallergen der Fagales (z.B. Birke) dieser Enyzmgruppe zugehörig sind.
